Tamra the new all day dining at Shangri-La’s – Eros Hotel, New Delhi hosted an exclusive masterclass with Chef Muhammad Lisarani from Shangri La Kuala Lumpur to kick off the Malaysian Food Festival from 23 to 31 May 2015 in association with Tourism Malaysia and the Malaysian High Commission.

Chef Muhammad Lisarni has been a part of the Shangri-La group for the past 11 years.  Specializing in Malay cuisine, he has played an integral role in the production of the Malay kitchen at Shangri-La’s – Eros Hotel, New Delhi’s sister hotel in Kuala Lumpur.

Chef Muhammad’s cooking style is based on traditional methods showcasing simplicity, freshness and natural textures, which are imbued with cultural influences. Guests will be able to savor various Malay cuisine flavors artistically crafted by Chef Muhammad Lisarni, such as Kerabu Udang Dengen Soohoon(Prawns and Glass Noodle Salad), Serunding Ayam (Spicy Dried Chicken Floss), Sup Sayur Cendawan (Plain Oyster Mushroom Soup), Ayam Masak Lema kCili Padi (Chicken in Spicy Coconut and Turmeric Gravy), Sayur Munir Goreng (Stir Fried Mix Vegetables with Coconut Gravy) and Terung Goreng Bersambal (Deep Fried Eggplant with Chili Paste).

Drawing inspiration from the streets of Malaysia, Tamra will be setting a festive tone with red lantern, dream catchers and hangings. This food festival is a voyage designed to transport the diner to the beautiful country of Malaysia. Live carts stationed in the restaurant’s cavernous halls housing authentic delicacies, such as Chicken Satay and other signature dishes, will capture the essence of a Malaysian marketplace.

The food was beyond amazing. Every dish was delectable and authentic, not one thing that I could not like or could thought of avoiding. As it’s known to all my readers that I’m already very fond of Tamra and it’s food, the hospitality and decor takes a few more points and makes Tamra a winner in all aspects. It’s a heaven for vegetarians because no restaurant serves such a lavish spread for vegetarians in buffet but Tamra has made sure that they have something for everyone. From mouthwatering desserts to succulent Indian spread and flavorful Japanese and Asian cuisine, this place has everything.

Summers are here and everyone has either been planning or going on a vacation but I am neither planning nor going, all thanks to over crowded vacation places. But this one wish of going to Europe and dining at an European alfresco restaurant was undying, so when I got a call from Fio – Cookhouse & Bar, I thought my wish was granted by the god and i was bound to visit this little Europe in the capital as I call it.

I was invited to try the new summer menu which will soon be launched in coming days. This menu has more refreshing flavors, ingredients like watermelon, citrus and all the other things that helps in getting away with the heat is added. I tried a few new and a few all time favorites and I was floored yet again.

The above seen picture was my dinner table. Isn’t it gorgeous? Well this place has well mannered, sophisticated and knowledgeable staff as well. They know what they are serving you and make sure that you have a perfect meal.

To start with we ordered Cookhouse Cocktails, El gringo Jito & It’s me at 18 precisely. Both the cocktails were super refreshing and rightly spiked with alcohol and juice, making a perfect balance. We were soon served with a bread basket which is a signature thing of Cookhouse. All the breads are fresh, in-house and perfectly baked. I ate away the whole basket and by this you can imagine how good they must have been.

For starters we opted for Phylo Tazza, Spit fired grilled chicken and for salads we had Cookhouse salad and Watermelon Bocconcini Fennel salad. Phylo Tazza is a flaked pastry stuffed with Artichoke, mushroom-pepper, caramalized onions, goat cheese all filled in phylo cups. This dish is as amazing as it could be. A beautiful amalgamation of all the ingredients with goat cheese makes it so much tasty and it will leave you craving for more, the phylo cups are neither too soft nor to hard and you can probably have one cup in one bite. The spit fired grilled chicken was on a drier side and it could be either topped or accompanied by some sauce.

Cookhouse salad had goat cheese, tomato quenelles, snow peas, corn, green apple, baby greens, fir dressing. Salads are my favorites, I dig into salads like no other thing and mostly end up finishing the plate. Salads at Fio are always a treat since they put a lot of effort into the conceptualizing them and putting right ingredients in right quantity. Even the presentation plays a massive role in making a dish appealing other than the taste factor and all these thing can be found in the dishes served at fio. The Watermelon Bocconcini salad was again class apart. I nearly ate half of this on my own.

I have been to Fio before but didn’t get a chance to try their pizzas, this time I made sure I try at least one of them and hence I ordered a Pepperoni, Jalapenos pizza. Their pizzas are wood fired ones and from the base to sauce everything is made in house, which makes it better than a lot of other places.

Next were the mains, Cookhouse Char Grilled Chicken and Olive Crusted Sea Bass were the dishes we chose to try. Both the dishes were astonishing! The chicken was just perfectly grilled with the mushroom sauce smeared all over the chicken, giving it that extra flavor and the bed of salad was equally good. The best part in the mains at fio is, they serve extra sauce along with the dish so that you don’t have to struggle with the dish, if by chance it is less saucy. The sea bass was juicy and soft, with the olive crust being so flavorful, one doesn’t need to put anything over it.

“Steam It” by Tupperware- Product Review

Tupperware has been a trusted name in the market of microwave friendly plastic consumer goods. The brand has been a household name across the world since 60 years now and the trust has not gone anywhere from people’s mind and heart. When I was approached by the team a few weeks back to review this new “Steam It” product that has been launched recently, quite happily I agreed on doing so.

This product is so amazing, easy to use, very easy to clean, dishwasher safe and many more. Unlike other steamers this doesn’t have a smell problem and with simple washing the odor of the food goes away. And I must mention the size, this is a double decker steamer, which takes less time to prepare two types of steaming at a time. Or you may steam a lot at a time for whole of your family.

A few points that you should know about “Steam It” :

1. It’s easy to clean.

2. A normal steamer leaves a smell in steamed foods after steaming in it. But tupperware steamer has no issue with any smells.

3. Some steamers has to be use with banana leaf or parchment papers in it. But it is not possible every time to get those. But with tupperware steamer we can use it as it is. No need any banana leaf or parchment paper. 

It takes only 7-8 minutes to steam veggies in two racks, so this is a time saver also. So my thumbs are up for this steamer “Steam IT”. And the price of this steamer worth it. My followers go ahead for this amazing product.

Steaming momos take almost 20-25min in the usual steamer but steam it made making momos all the more easier and quicker. The momos were done in 10-12min max. As for the Gatte (Rajasthani Dish) it was nothing less than a magic! The usual steaming time is 45min and the gatta’s were prepared in 25-30min in “Steam It”.

The Dumpling Menu is pure fun with great taste, allowing you to enjoy a mini meal of Dim sums: Street Style Spicy Dumpling (minced vegetable/chicken or shrimp), Traditional Peking Dumpling, Jungle Dumpling (chive infused vegetable or minced shrimp dumpling, topped with ginger, mint and soy sauce), Old School Gyoza(Lightly pan fried vegetable or chicken dumplings with a spicy “momo” sauce).

Though I loved the dumplings thoroughly there is one thing that remains the center of my concern and that is, the sauce makes the steamed dumplings soggy and the pan fried ones had a little layer of oil which was mixed with these dumplings and again made them too soggy.

The light, almost cloud like “Mantaus” come with stuffing’s such as Porky Apple Mantau Makeover (shredded pork belly, caramelised apple infused with red chilli, served in a mantau), Tokyo Metro Mantau (Crumb crusted slivers of aubergine or chicken with wasabi mayo and Japanese BBQ sauce served in a mantau), Cheesy Veggie Bun(stir fried pad choi, pine nuts ,spices and fresh cheese, served in a closed bao).

The mantau’s were perfectly stuffed and the filling was an absolute stunner but the bread was way too fermented which gave me a taste of south Indian rice dumpling (Idli) and the bread was almost over powering the filling inside.

Chinese Chicken Puff (minced chicken wok tossed in a 5 spice aroma and baked into a puff) and Char Siu Puff (The classic sweet “Char Siu” style vegetable or pork stuffed puff).

These puff’s can be mistaken for the french pastry but no it’s not that. These are traditional sweet char sui puff which is either filled with minced chicken or veggies. At first I was confused about the sweetness but when I asked about it then I was told that that is how they are made, a little sweeter. If you don’t like the sweetness in your food then you can probably avoid this.
